Homemade meatloaf, roasted veggies and crescent rolls

It’s officially spring break and I wanted to surprise my family with homemade meatloaf, roasted vegetables and crescent rolls. My parents came back from the Philippines yesterday so I thought making dinner would make things a bit better for them. I originally planned to make mashed potatoes with gravy but I changed my mind and made roasted mushrooms and asparagus instead so that they would not spoil. I bought them last week (or maybe it was more than a week ago).

So, here it goes…

Homemade Beef, Pork, and Turkey Meatloaf

  • 2 pounds of ground beef
  • 1 pound of ground pork
  • 1 pound of ground turkey
  • 4 large eggs
  • 2 cups of dry bread crumbs
  • 2/3 cup of Worcestershire sauce, plus more for the topping
  • 2/3 of finely chopped onions
  • 1/2 cup of Tomato Ketchup

Preheat over to 350 degrees Fahrenheit. In a large bowl, combine and fully mix the ground beef, ground pork, ground turkey, 4 large eggs (beaten), bread crumbs, 2/3 cup of Worcestershire sauce, onions, and tomato ketchup. Shape the meat into a loaf in a baking or roasting pan. Add extra Worcestershire sauce on top of the meatloaf and ketchup. I like to make a zigzag shape with both the Worcestershire sauce and the ketchup. Bake it for 1 hour and 10 minutes. Let it stand for about 5-10 minutes before serving. Roasted Asparagus and Mushrooms

This was inspired by allrecipes.com.

  • 1 bunch of fresh asparagus, trimmed
  • 1 pound of fresh mushrooms, cut in halves
  • 3.5 teaspoon olive oil
  • Kosher salt to taste ( I didn’t add this because I figured each of my family members have different preference)
  • Freshly ground black pepper to taste

Preheat oven to 450 degrees Fahrenheit. Place the asparagus in a baking pan and the mushrooms in a separate baking pan. Add 2 teaspoon of olive oil in the mushrooms and 1.5 teaspoon of olive oil in the asparagus. Add salt and ground black pepper. (This is dependent on what you prefer. I personally only added a little bit of pepper and did not add salt since my family members have different preferences regarding how much salt to add.) Mix the asparagus with oil, salt, and black pepper together. Lay them evenly on the pan. Mix the mushrooms with oil, salt, and black pepper together. Lay them evenly on the pan. Roast all of them in the preheated oven for about 15 minutes.IMG_0222IMG_0219

Crescent Rolls

  • 2 cans of Pillsbury refrigerated crescent dinner rolls

Preheat oven to 375 degrees Fahrenheit. Separate the dough into 16 triangles. Loosely roll the triangle from the shortest to the opposite side, in a crescent shape. Bake at the preheated oven for about 13 minutes or until golden brown.

36. Be crafty and make something from Pinterest

As many of you probably already know, I am in the Phi Delta Epsilon medical fraternity on campus. In the fraternity, we have families. My family is the Teenage Mutant Ninja Turtle and in those families, there are “bigs” and “littles.” Essentially, a person has one big and every member can have as many littles (or as little) as she or he wants. As of fall 2015, I have the most littles in my fraternity, which is 5. I was lucky to have two “twins” (two littles at the same semester). I wanted to do something special for my last twins since it was their Big Day Reveal (where they found out I am their big) so I made this. I saw it on pinterest and fell in love with it! It’s a big edible card. Who wouldn’t be excited about getting this? I know I would be!

Materials needed:

  • Chocolates and candies that fit your message.
  • Sharpie.
  • Poster Board.
